Making Popsicles

These tropical kiwi mango raspberry popsicles are made up of some of my favorite summer fruits.  In fact, swap some of your favorite fruits out in this recipe and make these cool treats your own.  The treats are so easy to make. Clearly, the wait will be the hardest part of this recipe.  However, the wait will be well worth it!

  1. Decide on your fruits and juice for your tropical treat.  I chose mango, kiwi, and raspberry because they are plentiful this time of the year.  Honestly, popsicles can be made year round using fresh or frozen fruits, along with fresh, frozen or can juice.
  2. Arrange the mango, kiwi, and raspberry evenly throughout the mold.
  3. Pour juice evenly into molds.  Place the popsicle sticks in the center of each mold.  Cover the top of the mold with the lid, however, if you don’t have the lid cover each mold with a small piece of foil.  Freeze 6 to 8 hours or until firm.
  4. Once the popsicles are completely frozen, it’s now time to remove the tropical treats from their molds.  Remove the lid or foil and place bottoms of popsicles under cold running water (warm water will cause the popsicles to melt too quickly) until loosened.  Dip the mold for five seconds, then press firmly on bottoms to release (Do not twist or pull sticks too hard).

  2. Pour juice evenly into molds.
  3. Insert the popsicle sticks into the center of each popsicle.
  4. Place the popsicle cover over each of the sticks cover the top of the popsicle mold. Use foil to cover the tops of your popsicles if you don't have a cover. The covering is to prevent icicles from forming.
  5. Freeze 8 hours or until firm.
Unmolding popsicles once they are frozen:
  1. Remove the cover from the popsicle mold.
  2. Fill your sink with cold water (warm water will cause the popsicles to melt too quickly).
  3. Dip the mold for five seconds, then wiggle the bottom, and the sticks. Repeat until the popsicles began to loosen from the sides. Gently remove each popsicle from the mold.
  4. Immediately place the popsicles on a foil or parchment-lined baking sheet and return to the freezer. Allow the popsicles to sit in the freezer for 10 minutes to become firm. Enjoy!
