Smooth and Silky Key Lime Pie

The smooth and silky key lime pie is one of my youngest son’s favorite desserts.  It wasn’t on my watch that he discovered he loved key lime pie.  I never made it while he was growing up, however, one day recently I asked him what he would like to have for dessert for one of our family dinners.  That’s when he suggested the smooth and silky key lime pie.

Well, mom made it happen!  That luscious tart taste with a hint of sweetness, the smooth and silky key lime pie was the family’s dessert for that dinner.

I just have to say in all my years on this earth it was the first time I had ever tasted key lime pie.  It was the first time I made a key lime pie.  Anything for my baby boy.  The smooth and silky key lime pie was simply delicious!  I had to admit I’ve eaten lots of different pies,  but the key lime pie is definitely a keeper and I Ioved it!


This is such an elegant pie.  It’s easy and simple to make.  This smooth and silky key lime pie makes it easy to love.  Topped with a rich homemade whip topping and it’s the added cherry on the pie that takes this dessert to the next level.

Ingredients
  • GRAHAM CRACKER CRUST
  • 1-1/2 cup crushed graham crackers
  • 2 tablespoons ground pecan
  • ¼ teaspoon cinnamon
  • ¼ cup sugar
  • 1 stick melted butter
  • KEY LIME FILLING
  • 14 ounces sweetened condensed milk
  • ½ cup key lime juice or lime juice
  • 2 teaspoons lime zest
  • 4 egg yolks
  • Garnish with whipped topping and lime zest
  • WHIPPED TOPPING
  • ½ cup whipping cream
  • 1 tablespoon sugar
  • ¼ teaspoon vanilla
Instructions
  1. GRAHAM CRACKER CRUST
  2. Preheat the oven to 350 degrees.
  3. In a small bowl stir together graham cracker crumbs, ground pecan, cinnamon, sugar and melted butter. Blend all together until thoroughly mixed. Press the crust into a 9-inch pie pan.
  4. Bake the crust for 10-12 minutes at 350 degrees until lightly brown.
  5. FILLING
  6. In a medium bowl beat the egg yolks for two minutes. Add the sweetened condensed milk and beat for another minute. Slowly add the lime juice and zest to the mixture beat for another minute.
  7. Pour the mixture into the pie shell, bake the key lime pie in a 350 -degree oven for 15 minutes just until the filling is set.
  8. Cool the filling for two hours. Garnish with lime zest and whip cream.
  9. Slice the smooth and silky key lime pie and serve chill.
  10. WHIP CREAM TOPPING
  11. Use a mixer or whisk to beat the topping until stiff peak form. Add the sugar and vanilla beat until all the ingredients are thoroughly incorporated.
