Rotisserie Chicken Salad

I love a good chicken salad.  Nothing says fall like a warm chicken salad.  Whether you like your chicken salad hot or cold we can all agree it has to be delicious.  The best chicken salad I ever had was made by a colleague for a Potluck Luncheon we were having at school some years ago.  Once I took one bite of the salad I said,  “girl this is the best chicken salad I have ever had.  What did you put in this salad?” She laughed and answered the secret weapon is to use rotisserie chicken.  There you have it the secret is out use rotisserie chicken to make a delicious chicken salad.

It makes perfect sense to me to use roasted chicken for the salad.   It has such a wonderful rich flavor throughout the meat.  I like using a mixture of light and dark meat when making my rotisserie chicken salad.  The parts of the chicken you use is totally up to you.

The good thing about using a rotisserie chicken is you could use half the chicken for the salad and the other half of the chicken for a totally different dish.

The good thing about using rotisserie chicken is that this salad comes together so quickly you will be sitting down eating before you know it.  Whether you need something quick for lunch or you need to get dinner on the table really fast.  Rotisserie chicken salad is sure to become one of your families favorite meals.

I chopped a few peppers, celery, and onions to add to the cube chicken.  Along with that I also added a nice amount of mayonnaise and Dijon mustard for added flavor.

I added a few dried cranberries and sunflower seeds to the salad to give it that added pop of flavor.  You put your own spin on the Rotisserie chicken salad if you don’t like berries and seeds don’t add them.  I love the flavor and the texture that they bring to the salad.

Add some salt, ground pepper and mix all the ingredients together and get ready for a party in your mouth.  I’m sure you’ll agree that this is one of the best chicken salads that you have ever tasted.  Let me know if you agree in the comments below.

A chicken salad that is big on flavor, light enough to be used for a lunch or bold enough to be used as a main dish.

Ingredients
  • 3 cups cubed boneless rotisserie chicken
  • ½ cup diced green (red, yellow) peppers
  • ½ cup dried cranberries
  • ¼ cup sunflower seeds
  • ⅓ cup diced celery
  • ¼ cup diced onions
  • 3 tablespoons Dijon mustard
  • ½ cup mayonnaise
  • ½ teaspoon salt
  • 1 teaspoon ground pepper
Instructions
  1. Combine the chicken, peppers, cranberries, sunflower seeds, celery, onions, mustard, mayonnaise, salt, and ground pepper in a mixing bowl. Mix all of the ingredients until combined. Serve immediately or chill for 2 hours before serving. Serve with your favorite crackers, bread or lettuce.
