Mahi-mahi is a light mellow tasting fish found in tropical and subtropical waters worldwide. Mainly, most mahi-mahi is caught off of the Hawaiian Islands.  It’ s inexpensive and perfect for those on a budget.  Honestly, who’s not on a budget?

One of the best investments that I’ve made is my grill pan.  It works wonders on making grilled meats and vegetables.  However, if you don’t have a gill pan use a skillet to sear your fish.  Simply oil your grill pan or skillet then salt and pepper the fish.  Once the grill pan is heated place the mahi mahi on the grill allowing it to cook for three minutes without turning the fish.  Turn the fish and allow to cook another two minutes.  Take the fish off the grill allowing it to rest for 5 minutes.  As a result, the juices recirculate throughout the fish.

I’m so impressed with this Pan-Grilled Mahi Mahi.  It actually looks a lot like a big juicy steak.  The key is not to over cook the mahi mahi. This can lead to the fish being tough.
