Fresh glazed strawberry pie practically screams summer. Strawberries are plentiful this time of the year. Access to local fresh strawberries is a blessing. The berries are much sweeter and lead to a much more delicious dessert. That’s why I like making this delicious fresh glazed strawberry pie this time of the year. It’s always a crowd pleaser.
I can’t help but think about all the wonderful memories I’ve made picking strawberries with my two sons when they were growing up. There was a local farm in my area years ago run by school teachers. I would often take my boys there to teach them the process of how farm to table works. It was so much fun picking strawberries with the boys they ate more strawberries than they picked.
I can remember making a fresh glazed strawberry pie with them when they were younger. I would allow them to place the strawberries and glaze into the prepared pie crust. It made for the perfect bonding moments. You couldn’t tell them that they weren’t the best cooks in the whole world. The steps are pretty simple and straightforward. This would be a wonderful summer activity to do with the kiddos or the grandkids.
Fresh Glazed Strawberry Pie
Blend two cups of strawberries sugar in a blender with lemon juice to make a glaze for the strawberry pie.
Over medium heat in a saucepan cook the strawberry glaze. Add two and half-tablespoons cornstarch to 1/2 cup water, mix the two together. Combine a small amount of the warm strawberry mixture to the cornstarch mixture stirring to remove any lumps. Add the cornstarch mixture to the strawberry mixture. Cook and stir the mixture until thickened for about 10 minutes. Allow the mixture to cool.
Add a few drops of red food coloring (optional) to the strawberry mixture to intensify the color of the glaze.
Use a prepared pie crust. Bake the crust according to the package direction or make your own pie crust using your own recipe. Allow the crust to cool. Fill the crust with strawberries and strawberry glaze, alternating the two in the crust. Make sure to coat each berry thoroughly.
Allow the fresh glazed strawberry pie to chill and set for 2 to 3 hours. Top the pie with whip topping (optional) and enjoy.

- 2 cups whole small to medium strawberries for pie (set aside). Large strawberries can be cut in half and quarter pieces.
- 2 cups pureed strawberries
- 1 cup sugar
- ½ cup water
- 2½ tablespoons cornstarch
- ½ teaspoon red food color (optional)
- 2 teaspoons lemon
- 1 9-inch deep dish prepared pie crust
- 1 small container prepared whipped topping
- Bake 9-inch prepared pie crust according to the package direction, and allow the crust to completely cool. (or make your own 9-inch pie crust)
- GLAZE- Puree 2 cups strawberries, sugar, and lemon juice in a blender or food processor and blend until smooth.
- In a saucepan combine the pureed strawberries glaze cook over medium heat until bubbly. In a small bowl combine and mix the water and cornstarch until smooth.
- Take a small amount of the hot strawberry glaze and add it to the cornstarch liquid and mix thoroughly (this should prevent the glaze mixture from becoming lumpy). Add the cornstarch mixture and red food coloring (optional) to the glaze. Stirring constantly to prevent lumps cook for another 3 to 5 minutes to prevent lumps.
- Allow the strawberry glaze to cool completely.
- Line the pie crust with berries and glaze. Allow the glaze to set in the fresh glazed strawberry pie. Chill the pie for 2 hours allowing the glaze to set.
- Serve with whipped topping, optional.
