Easy Ginger Shrimp Fried Rice

Fried rice is a restaurant favorite which can be made right in your very own kitchen. Easy ginger shrimp fried rice can be prepared in your kitchen and be on your family's table before it can be delivered to your front door.
Ingredients
  • 4 cups cooked long grain rice (best prepared the day before, so the rice dry and separates easily)
  • 1 scallion, chopped
  • 2 teaspoons fresh grated ginger
  • 1 12-ounce package peas and carrots
  • 1 cup bean sprouts
  • 8 ounces medium to large shrimp
  • 2 tablespoons fish sauce
  • 2 eggs
  • 3 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
Instructions
  1. Prepare rice according to the package directions to yield 4 cups cooked rice.
  2. Clean and devein the large shrimp, cut them in half (optional) or use medium shrimp.
  3. Beat two eggs in a bowl. Scramble the eggs in one tablespoon of hot oil in a skillet. Break the eggs into medium to small pieces remove them from the skillet, and set aside.
  4. Using another tablespoon of oil stir-fry the shrimp until pink. Remove the shrimp from the skillet, and set aside.
  5. Heat the vegetables, ginger, and scallions, until heated thoroughly. Next, add the rice to the pan. Stir-fry for two minutes.
  6. Now, add the scrambled eggs, shrimp, bean sprouts to the stir-fry. Cook for another two minutes
  7. In a liquid measuring cup mix the soy sauce, sesame oil, and fish sauce together.
  8. Add the soy sauce liquid to the skillet and stir-fry for another couple of minutes. Remove from heat plate the fried rice and eat.
