Fresh Glazed Strawberry Pie

A scrumptious summer dessert full of fresh strawberries that's simple and easy to make.
Ingredients
  • 2 cups whole small to medium strawberries for pie (set aside). Large strawberries can be cut in half and quarter pieces.
  • 2 cups pureed strawberries
  • 1 cup sugar
  • ½ cup water
  • 2½ tablespoons cornstarch
  • ½ teaspoon red food color (optional)
  • 2 teaspoons lemon
  • 1 9-inch deep dish prepared pie crust
  • 1 small container prepared whipped topping
Instructions
  1. Bake 9-inch prepared pie crust according to the package direction, and allow the crust to completely cool. (or make your own 9-inch pie crust)
  2. GLAZE- Puree 2 cups strawberries, sugar, and lemon juice in a blender or food processor and blend until smooth.
  3. In a saucepan combine the pureed strawberries glaze cook over medium heat until bubbly. In a small bowl combine and mix the water and cornstarch until smooth.
  4. Take a small amount of the hot strawberry glaze and add it to the cornstarch liquid and mix thoroughly (this should prevent the glaze mixture from becoming lumpy). Add the cornstarch mixture and red food coloring (optional) to the glaze. Stirring constantly to prevent lumps cook for another 3 to 5 minutes to prevent lumps.
  5. Allow the strawberry glaze to cool completely.
  6. Line the pie crust with berries and glaze. Allow the glaze to set in the fresh glazed strawberry pie. Chill the pie for 2 hours allowing the glaze to set.
  7. Serve with whipped topping, optional.
