Bountiful Crab Chowder

A rich hearty flavorful chowder that is sure to satisfy the most sophisticated pallet.
Ingredients
  • 3 tablespoons oil
  • 1 medium green pepper, chopped
  • 3 stalks celery, chopped
  • 1 large red onion, chopped
  • 3 cloves garlic, chopped
  • 1 box frozen mixed vegetables (corn, green beans, and peas)
  • 2 medium potatoes peeled and cut into medium cubed
  • 1 can (16 ounces) crushed tomatoes
  • ½ cup red wine
  • ½ cup water
  • 11/2 tablespoons OLD BAY Seasoning
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon salt
  • 1 teaspoon pepper
  • 10 ounces claw crabmeat (backfin crabmeat, shrimp or fish)
Instructions
  1. In a large pot, heat vegetable oil. Add peppers, onion, celery, and garlic; Saute until tender, about 5 minutes.
  2. Mix in crushed tomatoes, wine, and water. Bring to a boil.
  3. Add the OLD BAY Seasoning, potatoes, mixed vegetables, cayenne, salt, and pepper.
  4. Cover and simmer for 25 minutes, stirring occasionally.
  5. Stir in crab (backfin crabmeat, shrimp or fish). Simmer 25 more minutes.
