Baked Citrus Salmon

- 2 medium salmon pieces
- 2 to 4 thinly slices of lemon
- 4to 6 thinly slices of oranges
- MARINADE
- 3 tablespoons olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- ½ l teaspoon lemon zested
- 1 teaspoon lemon juice
- ½ teaspoon orange zest
- 1 teaspoon orange juice
- 1 clove garlic
- 2 tablespoons cilantro
- ½ teaspoon salt
- ½ teaspoon pepper
- Cooking spray
- Preheat oven 350 degrees
- Spray a medium baking dish with cooking spray
- Place fish skin side down in baking dish.
- Using a spice grinder or chop cilantro and garlic
- In a small bowl add chopped cilantro, garlic, dijon mustard, olive oil, honey, lemon zest, orange zest, lemon juice, orange juice salt and, pepper.
