A chicken salad that is big on flavor, light enough to be used for a lunch or bold enough to be used as a main dish.
Ingredients
3 cups cubed boneless rotisserie chicken
½ cup diced green (red, yellow) peppers
½ cup dried cranberries
¼ cup sunflower seeds
⅓ cup diced celery
¼ cup diced onions
3 tablespoons Dijon mustard
½ cup mayonnaise
½ teaspoon salt
1 teaspoon ground pepper
Instructions
Combine the chicken, peppers, cranberries, sunflower seeds, celery, onions, mustard, mayonnaise, salt, and ground pepper in a mixing bowl. Mix all of the ingredients until combined. Serve immediately or chill for 2 hours before serving. Serve with your favorite crackers, bread or lettuce.
