Ingredients
Cranberry Jam
1 cup water
3 cups fresh or frozen cranberries
¼ cup fresh orange juice (optional) or water
1 cup sugar
1 teaspoon corn starch
¼ cup water
Cream Cheese Filling
1 8-ounce cream cheese, softened
¼ cup sugar
2 tablespoons flour
1 egg
Torte Crust
2 -1/2 cup flour
¾ cup sugar
1-1/2 sticks butter, softened
¾ cup sour cream
1 egg
½ teaspoon baking powder
½ teaspoon baking soda
1 teaspoon almond extract
1 cup slivered almonds
Instructions
Cranberry Jam
First, start by adding cranberries to a saucepan along with sugar, orange juice (optional), or water. Next, make a slurry from the cornstarch and ¼ cup water to thicken the jam. Finally, allow the cranberry mixture to cook. Once the mixture thickens after 10 minutes then, you should have cranberry jam. Set aside.
Cream Cheese Filling
Next, mix cream cheese, sugar, flour, and egg together until smooth and fluffy with a mixer. Set aside.
Torte Crust
Preheat the oven to 350 degrees. First, grease the bottom and side of a springform pan (this pan has a latch that can be loosened after baking to help remove the cake after baking). Next, lightly flour the pan. If you don't have a springform pan, simply use a 9 to 10 inch- deep dish cake pan. Line a cake pan with parchment paper to help remove the cake from the pan when done.
To make the crust combine the flour and sugar in a large bowl then, cut in the butter, using a pastry blender until the mixture looks like coarse crumbs. Reserve 1 cup of the crumb mixture.
Next stir baking powder, baking soda, salt, sour cream, almond exact, and egg into the remaining crumb mixture.
Spread the batter over the bottom and 2 inches up the side of the pan.
Begin by pouring the cream cheese filling over the batter. At the same time, spread the filling evenly over the torte.
Next, spoon the cranberry jam mixture over the filling.
Mix the sliced almonds into the crumble mixture. Next, sprinkle the crumble over the Cranberry Cream Torte.
Finally, bake the Cranberry Cream Torte at 350 degrees for 50 to 60 minutes until the topping is golden brown. Afterward, cool 15 minutes: Remove the torte from the springform pan. Allow the torte to cool 15 another minutes before serving.
