Grilled Peaches and Corn with Feta Cheese Salad is perfect for a summer meal which can be ready in less than 30 minutes. It's filled with sweet peaches and corn and topped with the savory flavor of balsamic dressing.
Ingredients
8 ounces Baby Spinach & Spring Mix
2 fresh whole peaches, sliced
½ cup pecan, halves
½ cup fresh blueberries
1-ounce feta cheese, cubed
salt & pepper to taste
Balsamic dressing or bottled dressing
¼ cup balsamic vinegar
½ cup olive oil
1 Tablespoon minced garlic
2 Tablespoons honey
½ teaspoon salt
½ teaspoon pepper
Instructions
Begin by spraying a grill pan with vegetable spray.
Wash and dry two peaches. Slice the peaches into wedges. Set aside.
Shuck two ears of corn. Set aside.
Preheat the grill to medium-high.
Place the corn and peach slices on the grill. Grill for 2-3 minutes, or until there are grill marks. Remove from heat.
Once the corn has cooled, cut the corn off the cob. Set aside.
On a serving platter or in a large bowl add the spinach & mixed greens. Arrange the blueberries, feta cheese, pecans, corn, and peaches on top of the greens. Serve with the dressing on the side.
Balsamic Dressing
Use a jar with a lid, add balsamic vinegar, olive oil, minced garlic, honey, salt, and pepper. Set aside.
