Sweet Italian Sausage Peppers Stir-Fry with Pasta

There’s nothing more satisfying than a quick Sweet Italian Sausage Peppers Stir-Fry with Pasta, sautéed in fresh garlic, onion, and spinach for dinner. A one-skillet dish that can be on the table in less than 30 minutes.
Ingredients
  • 1 pound Sweet Italian Sausage
  • 1 yellow multi-colored pepper (your choice)
  • ½ red multi-colored pepper (your choice)
  • 2 cups spinach
  • ½ cup sliced onions
  • 2 garlic cloves, minced
  • 1 teaspoon oregano
  • ½ teaspoon salt
  • 1 teaspoon black pepper
  • 12-ounces box rotini pasta, (pasta of your choice)
  • 2 tablespoons olive oil
  • 2 tables butter
Instructions
  1. Begin by slicing the peppers and onions into medium strips. Minced the garlic cloves.
  2. Cook the pasta in a large pot of salted boiling water until al dente according to package directions. Drain the pasta, then set aside.
  3. While the pasta is cooking slice the Italian Sausage into 1-inch pieces or (remove the sausage from the casings).
  4. In a large skillet cook the sausage over medium heat until only a small amount of pink remains, 6-8 minutes.
  5. Next add the yellow and red peppers, onion, garlic, oregano, salt, and black pepper, then continue to cook for another 5 minutes.
  6. Add the pasta to the skillet combine thoroughly. Lastly, add the fresh spinach and butter to the skillet, mix until the butter melts and the spinach wilts, 2 minutes.
