There’s nothing more satisfying than a quick Sweet Italian Sausage Peppers Stir-Fry with Pasta, sautéed in fresh garlic, onion, and spinach for dinner. A one-skillet dish that can be on the table in less than 30 minutes.
Ingredients
1 pound Sweet Italian Sausage
1 yellow multi-colored pepper (your choice)
½ red multi-colored pepper (your choice)
2 cups spinach
½ cup sliced onions
2 garlic cloves, minced
1 teaspoon oregano
½ teaspoon salt
1 teaspoon black pepper
12-ounces box rotini pasta, (pasta of your choice)
2 tablespoons olive oil
2 tables butter
Instructions
Begin by slicing the peppers and onions into medium strips. Minced the garlic cloves.
Cook the pasta in a large pot of salted boiling water until al dente according to package directions. Drain the pasta, then set aside.
While the pasta is cooking slice the Italian Sausage into 1-inch pieces or (remove the sausage from the casings).
In a large skillet cook the sausage over medium heat until only a small amount of pink remains, 6-8 minutes.
Next add the yellow and red peppers, onion, garlic, oregano, salt, and black pepper, then continue to cook for another 5 minutes.
Add the pasta to the skillet combine thoroughly. Lastly, add the fresh spinach and butter to the skillet, mix until the butter melts and the spinach wilts, 2 minutes.
