Easy Ginger Shrimp Fried Rice

Throw out your favorite take-out menu for fried rice.  Boy, do I have the recipe for you! Finally, easy ginger shrimp fried rice that is comparable to any Chinese restaurant.  You can have fried rice anytime you like made from ingredients you have right in your own kitchen.

Easy ginger shrimp fried rice is best made with day-old rice.  In fact, the rice is less likely to stick together when stir-frying.  If you have carrots, peas, chopped onions, a couple of eggs on hand along with seasoning such as soy sauce, grated ginger you are well on your way to having dinner on the table in under thirty minutes.

This dish can act as a side to a meal simply by omitting the protein.  However, by adding shrimp or chicken this could easily become the main course of the meal.  Clearly, by adding a salad or fresh fruit you now could have a complete meal on hand.  I normally have bean sprouts in my refrigerator they would add a lovely addition to the dish.  Throw in a few of your family’s favorite vegetables and make the dish your own.


I planned on using this dish as a main course.  When making easy ginger shrimp fried rice I would use small shrimp.  However, the only thing I had in the freezer were large shrimp.  During the prep process after cleaning and deveining (removal of the dorsal vein in the shrimp) the shrimp, I simply cut them in half.  As a result, I had nice bite-size pieces for the dish.

Years ago when I taught home economics my 7th-grade classes would prepare this dish as a food lab.  Can I say they loved this dish!  Equally important, it turned out fantastic for the classes.  So much so that they would make it for their families at home.

During that time the students were using the basic.  Mostly, rice, eggs, frozen mixed vegetables (peas and carrots), soy sauce and cooking oil.   There was no protein, bean sprouts, onions,  ginger, sesame oil, or fish sauce used.  Can I say it was about the cooking experience.  Working together with a group, learning time management, measurement, and so much more.  I guess I said all that to say it takes no time to make easy ginger shrimp fried rice.

The organization is key.  Once you assemble all your ingredients together the rest is a cinch. Just figure out what you want to cook first.  Such as the eggs or the vegetables. It’s really up to you.  Become familiar with the recipe.  Fry the eggs in a tablespoon of cooking oil,  remove the eggs from the skillet and set them aside.  Do the same for the shrimp.   Use the last tablespoon of cooking oil to stir-fry the vegetables, onions, and ginger until the vegetables are thoroughly heated through and through.  All the ingredients cook quickly.

Combine the seasoned vegetables with the shrimp (optional).  In a container mix the soy sauce, sesame oil, and fish sauce together.   Add it to the vegetables and shrimp (optional) stir-fry for another minute or two.  You want to make sure the sauce is fully incorporated into the easy ginger shrimp fried rice.

Serve immediately and enjoy!

Fried rice is a restaurant favorite which can be made right in your very own kitchen. Easy ginger shrimp fried rice can be prepared in your kitchen and be on your family's table before it can be delivered to your front door.

Ingredients
  • 4 cups cooked long grain rice (best prepared the day before, so the rice dry and separates easily)
  • 1 scallion, chopped
  • 2 teaspoons fresh grated ginger
  • 1 12-ounce package peas and carrots
  • 1 cup bean sprouts
  • 8 ounces medium to large shrimp
  • 2 tablespoons fish sauce
  • 2 eggs
  • 3 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
Instructions
  1. Prepare rice according to the package directions to yield 4 cups cooked rice.
  2. Clean and devein the large shrimp, cut them in half (optional) or use medium shrimp.
  3. Beat two eggs in a bowl. Scramble the eggs in one tablespoon of hot oil in a skillet. Break the eggs into medium to small pieces remove them from the skillet, and set aside.
  4. Using another tablespoon of oil stir-fry the shrimp until pink. Remove the shrimp from the skillet, and set aside.
  5. Heat the vegetables, ginger, and scallions, until heated thoroughly. Next, add the rice to the pan. Stir-fry for two minutes.
  6. Now, add the scrambled eggs, shrimp, bean sprouts to the stir-fry. Cook for another two minutes
  7. In a liquid measuring cup mix the soy sauce, sesame oil, and fish sauce together.
  8. Add the soy sauce liquid to the skillet and stir-fry for another couple of minutes. Remove from heat plate the fried rice and eat.
