Creamy Dill Sauce

I’ve been spending a lot of time in the produce section of my local grocer lately.  My goal is to incorporate more vegetables into my diet.  That would include herbs as well.  I have a goal to prepare new dishes made from spices, herbs, and foods that I’m not too familiar with.  A Creamy Dill Sauce is now on that list.

I spotted some beautiful dill in the produce department.  I had never seen dill quite that size it was pretty tall.   It was a lovely shade of green.   Most of the dill that I’ve seen was always growing in small pots or packaged in small bunches.  It was like it spoke to me; honestly!  Take me home with you and make me fabulous, and that is exactly what I did.

I thought I would try my hand at making a dill sauce for starters to go along with the mahimahi tuna I was having for dinner.  The dill sauce was simply delicious.

I can’t believe I’ve gone this long in my life and never had dill sauce.  What a wonderful opportunity to experience such a lovely flavor.  The dill sauce added another layer of depth to the tuna.

I can see this becoming my new best friend when snacking on peppers, celery, and carrots.  Dill has many various uses.   It can be a sauce or dressing for a salad.  Simply by thinning the sauce by adding a combination of water, olive oil and a bit of lemon juice you could have yourself a dressing.  I can imagine the dill being used as a spread on a sandwich.  The possibilities are endless.

How To Store Dill

Well, I certainly don’t want to overdo it with the dill.  There is no way I would use all the dill before it went bad.  Lucky for me dill stores well.

  1.  Rinse the dill to remove any grime and use the food processor to chop the dill into small pieces.
  2. Placed a small amount of dill and water in ice cube trays then I froze it.
  3. Removed the frozen dill from the ice cube tray placing them in plastic bags to store in the freezer for later use.   The dill could be used in soups, dips, stews and other foods.

You could also dry your dill if you like.  Well, that’s another story.  Life is about choices.  This is one delectable sauce that pairs really well with fish such as mahimahi tuna.

Ingredients
  • ½ cup mayonnaise
  • 1 cup sour cream
  • 2 tablespoons cream cheese (room temperature)
  • ½ cup grated cucumber
  • ½ cup chopped dill
  • 1 chopped green onion
  • ½ teaspoon salt
  • ½ teaspoon black pepper
Instructions
  1. Place all the ingredients in a small mixing bowl and whisk until thoroughly blended. Refrigerate for at least one hour before serving.
