Cranberry Cream Torte

Cranberry Jam

There is certainly a process in making this Cranberry Cream Torte.  However, the process is well worth the work.  Nevertheless, a few of the preparation can be cut or done the day before.  Skip a step by using a store-bought jam or make this cranberry jam days in advance.  That allows you to cut down on a few of the steps.  Without a doubt, this step is well worth it.

It takes very little time to make fresh cranberries into a jam.  Start by adding cranberries to a saucepan along with sugar, orange juice (optional), or all water, and a cornstarch slurry to thicken the jam.  Allow the cranberry mixture to cook for 10 minutes, and you’ll have yourself a lovely cranberry jam.  Next, let the jam cool before using it in the torte.

  2. To make the crust combine the flour and sugar in a large bowl.  Cut in butter, using a pastry blender until mixture looks like coarse crumbs.  Reserve 1 cup of the crumb mixture.
  3. Next stir baking powder, baking soda, salt, sour cream, almond exact, and egg into the remaining crumb mixture.
  4. Lastly, spread the batter over the bottom and 2 inches up the side of the pan.

Assemble the Cranberry Cream Torte

  1. Begin by pouring the cream cheese filling over the batter.  At the same time, spread the filling evenly over the torte.
  2. Next, spoon the cranberry jam mixture over the filling.
  3. Mix the sliced almonds into the crumble mixture.  Then, sprinkle the crumble over the Cranberry Cream Torte.
  4. Finally, bake the Cranberry Cream Torte at 350 degrees for 50 to 60 minutes until the topping is golden brown.  Afterward, cool 15 minutes:  Remove the torte from the springform pan.  Now, allow the torte to cool 15 minutes before serving.

  • 1-1/2 sticks butter, softened
  • ¾ cup sour cream
  • 1 egg
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon almond extract
  • 1 cup slivered almonds
