Citrus apricot dressing is so delicious and very easy to make. It gives a simple salad an added freshness and sweetness. If you have some tart summer fruits this would be the perfect dressing to bring a certain brightness to your salad or salsa.
If you have never made a dressing from scratch you must give it a try. It’s only been in the last few years that I started making my own dressings and vinaigrettes. Did I mention how easy they are to make? I feel they are so much better for you than commercial brands. The taste is better and you control what ingredients go into your dressing.
For this citrus apricot dressing, I started with a base of olive, apricot preserves, fresh orange juice, chop mint, mustard, maraschino cherry juice, salt, sugar, and orange zest. Place all the ingredients in a bowl or jar and blend. It has a wonderful sweet and tart flavor. Omit the sugar if you like, I’m convinced you will still love this dressing. Another dressing to try is the Creamy Dill, it has a really creamy light taste.

- ¼ cup apricot preserves
- 3 tablespoons orange
- 1 teaspoon orange zest
- 2 teaspoon maraschino cherry juice
- 1 teaspoon mustard
- ½ cup olive oil or salad oil
- 1 teaspoon sugar
- 1 teaspoon chopped mint
- ¼ teaspoon salt
- ½ teaspoon pepper
- Place all the ingredients except the olive oil into a small bowl and whisk the ingredients together.
- Slowly stream the olive oil into the ingredients while whisking vigorously. Whisk until the dressing is thoroughly combined.
- Allow the citrus apricot dressing to rest for an hour so the flavor will marry together. Serve the dressing over your favorite salad.
