Blue Moon Blueberry Mojito

This Blue Moon Blueberry Mojito is the perfect drink to quench your ongoing thirst during the dog days of summer.  Bathe by the dark blue hue of the blueberries and the ocean blue from the Curacao liqueur gives this mojito its dreamy blue moon appeal.   Here on the east coast, the heat has been brutal.  Just to have the opportunity to kick back, with your feet up in a shaded area while sipping on a mojito is soothing to the soul.

To make the traditional mojito all you need is white rum, sugar/simple syrup, fresh lime juice, and mint.  But who wants traditional when you can add a dash of club soda, your favorite berries, or fruit to customize your own special mojito.

Mojitos became my drink of choice while dining out this summer.  Most of the restaurants offered some sort of refreshing mojito either using blackberries, blueberries, or blue Curacao (a bitter orange, first discovered on a Dutch West India Island known as Curacao) with an accent of mint.  I was into the berry mojitos.  Such a refreshing drink during the lazy days of summer.

How to Make A Simple Syrup

Most mojitos often include sugar or simple syrup.  I prefer to use a simple syrup.  To make your own start by combining 1 part sugar to 1 part water.   Add your favorite fresh or frozen fruit if you like to make this a fruit syrup, then stir together.  Allow the mixture to simmer in a saucepan for 15 minutes until thickened.  Next, allow the syrup to cool.  Strain the mixture if the fruit was added, then store it in a jar with a tight-fitting lid.  And you have yourself a simple syrup.  It’s just that easy.

The syrup can be made days in advance and stored in the refrigerator for up to three weeks or until needed.  If you make a large batch it could be served over waffles, pancakes, as a topping for ice cream, or a garnish for many other desserts.

The Blue Moon Blueberry Mojito can surely become your signature drink for the summer.  It’s easy to make, the perfect cocktail for one or a crowd.  I love how the flavor of the cocktail has been intensified by the fusion of the blueberries in the simple syrup.

This light sweet refreshing drink needs a few ordinary ingredients that can be made in a matter of minutes.  Muddle your fruit, add your rum, Curacao (optional), lime juice, crushed ice, and top with club soda, then garnish with sliced lime and mint.  It’s just that quick and easy!  Sit back relax, and enjoy your Blue Moon Blueberry Mojito.

Blue Moon Blueberry Mojito is a quick refreshing cocktail filled with lot of juicy blueberries and jazzy fresh mint, mix with white rum and, topped off with fizzy club soda.

Ingredients
  • 2 oz. white rum
  • 1 oz. blue curacao (optional)
  • 3 tbsp. blueberry syrup or 2 tbsp. sugar
  • club soda
  • 6-7 medium fresh mint leaves
  • 1 tbsp fresh/frozen or (sweet syrup) blueberries
  • 1 tbsp. fresh lime juice
Blueberry Syrup
  • 1 cup sugar
  • 1 cup fresh/frozen blueberries
  • equal part water
Garnish
  • lime slices
  • fresh blueberries
  • fresh mint leaves
  • 1 Pilsner glass, Collins glass, or highball glass
Instructions
  1. In a tall glass gently muddle blueberries and mint leaves.
  2. Add rum, curacao (optional), blueberry syrup, lime juice, and slices of lime,.
  3. Fill glass with crushed ice.
  4. Top with club soda, then gently stir.
Blueberry Simple Syrup:
  1. Combine sugar, blueberries, and water, then stir together. Allow the mixture to simmer in a saucepan for 15 minutes until thickened. Next, allow the syrup to cool. Strain the mixture, then store it in a jar with a tight-fitting lid.
  2. Garnish with sprigs of mint and fresh blueberries, lastly add a straw and serve. Enjoy

  1. Skip adding rum for a non-alcoholic version.
