Baked Mango Habanero Wings

Baked Mango Habanero Wings are one of the perfect party foods to have on hand for your next sporting event, favorite bing watch, or just part of a weeknight dinner.  Furthermore, the sweet tangy sauce on these wings provides just the right amount of heat for that added punch of flavor.

These Mango Habanero Wings are easy to make.  For starters, they are baked and not fried.  Without a doubt, baked wings have a healthier benefit.  Meanwhile, the wings contain fewer calories, for that reason, it could lead to a smaller waistline.  And who doesn’t want that?

If spice is what you like know that you decide how much heat is in the sauce.  That’s the benefit of making this easy sauce.  However, if you got kids or family who don’t do spicy.  Know worries.  Most kids love sweets, but they may not like the hot spicy taste of these Baked Mango Habanero Wings.

We can make everyone happy.  How do you do that you say?  Well, you’ll make the base sauce first.  Next, remove a portion for those who may not like spicy, then add the peppers to the remaining sauce.  Now everyone is happy.

Steps Used to Make The Sauce

  1. When I say this sauce couldn’t be easier to make, start with mango pulp from a can.  How easy could that be? You don’t have to worry about mangoes being too expensive or being out of season.  If you have an International market nearby you can find mango puree, check with your local market or use fresh mango.  However, you’ll have a few extra processing steps.
  2. The ingredients needed are mango pulp, lime juice, minced garlic, butter, brown sugar, tomato sauce, Scotch Bonnet (optional or hot sauce) pepper sauce, and Habanero pepper sauce.  I prefer to use commercial pepper sauce because fresh habanero and scotch bonnet peppers can be tricky to work with.  You must be very careful as to not get the pepper in your eyes during preparation.
  3. In a saucepan combine all of the ingredients however, if you are making a non-spicy mango sauce pour a portion of the ingredients into a second pan.
  4. Add the hot sauces to the main mango sauce and simmer on medium heat for ten minutes, stirring frequently.   Remove from heat and cool for use on the chicken wings.

How Hot Are These Peppers?

These wings are a spice lover’s dream.  When using habanero peppers these wings can get pretty hot.  What makes them hot is the Scoville found in the peppers.  Back in 1912 a pharmacist by the name of Wilbur Scoville developed the Scoville Organoleptic Test.  He created a way to quantify the burn or spiciness of various peppers.  The main phytochemical in peppers that give them their heat, called capsaicin.

The ranges of Scoville Heat Units (SHU) typically used to call a pepper mild, medium, hot, or extra hot are: Mild (100 to 2,500) Medium (2,500 to 30,000) Hot (30,000 to 100,000)

  • The jalapeño peppers are only about 1000-4000 SHU.
  • The habanero chili peppers are 260,000 SHU
  • Scotch bonnet pepper is about 445,000 SHU
  • The Carolina Reaper delivers an average of 1,569,300 Scoville Heat Units (SHU), it is considered to be the hottest chili pepper

Steps to Making Baked Mango Habanero Wings

Start by prepping the wings.  Next, wash and remove any feathers not removed during processing.  Then, cut the wings into sections drumette, flats, and tips.  Now, take the tips to save in making chicken stock.  Once prep:

  1. Pat the wings dry.  Coat the wings in a batter of rice flour, baking powder, garlic powder, and onion powder.  Besides drying the skin of the wings, baking powder also helps to crisp the chicken wings.
  2. Next, take a baking sheet with a cooling rack placed inside and spray the rack to prevent the wings from sticking.  Once that’s done space the floured chicken on the rack.  Then lightly spray the chicken with vegetable oil.
  3. In a 350 degree oven bake the chicken for 20 minutes.  Afterward, increase the heat to 475 degrees.  Now flip each wing on the rack and continue baking for another 15 minutes.  The high heat will assist to crisp the chicken wings.
  4. Finally, base the wings with the mango habanero sauce.  Now, allow the wings in baking for another four to six minutes.

Ingredients
Wings
  • 2 pounds chicken wings, clean and cut into drumettes & flats
  • ½ tbsp. kosher salt
  • 1 tbsp. garlic powder
  • 1 tbsp. pepper
  • ½ cup rice flour (all-purpose flour)
  • 1 tsp. paprika
  • 1 tbsp. baking powder
  • Vegetable spray
Mango Sauce
  • 3 cups mango puree (30 ounces 1 large can)
  • ⅓ cup tomato paste
  • ½ cup butter
  • 3 garlic cloves, minced
  • ⅓ cup brown sugar
  • 4 tbsp. habanero pepper sauce (to taste)
  • 3 tbsp. Scotch Bonnet sauce or hot sauce (to taste)
  • 2 lime juice
Instructions
  1. Preheat the oven to 400°F.
  2. First, wash the wings and cut them into drumettes and flats. Secondly, remove the wingtips, keep them to make chicken stock for a different food preparation. Next, pat the wings dry. Meanwhile, in a large bowl combine the flour, baking powder, salt, pepper, and paprika. So, combine the ingredients together before adding the chicken wings. Then coat the wings with the flour mixture.
  3. Meanwhile, take a baking sheet with a cooling rack placed inside and spray the rack to prevent the wings from sticking. More importantly, transfer the wings to the cooling rack. Then lightly spray the chicken with vegetable oil.
  4. So, in a 350 degree oven bake the chicken for 20 minutes. Afterward, increase the heat to 475 degrees. Now flip each wing on the rack and continue baking for another 15 minutes. The high heat will assist to crisp the chicken wings.
  5. Finally, base the wings with the mango habanero sauce. Now, allow the wings to bake for another five minutes. Next, remove the wings from the oven serve them with your favorite dip. Enjoy!

  1. Begin by combining the mango pulp, tomato paste, butter, garlic, brown sugar in a saucepan, however, if you are making a non-spicy mango sauce pour a portion of the ingredients into a second pan. Now cook this as you would for the other sauce.
  2. Add the habanero pepper sauce, Scotch Bonnet pepper sauce, or hot sauces to the main mango sauce and simmer on medium heat for ten minutes, stirring frequently. Remove from heat and cool for use on the chicken wings.
