Mixed Berry Fruit Salad

I’ll take my fruit in a salad, what about you?  This Mixed Berry Fruit Salad is almost too pretty to eat.  However, eat up this is the perfect salad to fuel your body with all those wonderful nutrients.  Just know you can expect to get plenty of  A, B, and  C vitamins along with protein from the nuts, folic acid and iron from the spinach.

Who would ever guess that this salad would come together so quickly with items I had on hand.   My Mixed Berry Fruit Salad consists of blueberries, blackberries, strawberries, mini oranges, pecan, radicchio leaves, spinach and a light poppy seed dressing.  Serve this salad as an appetizer, side dish or main course it’s sure to make a big impression at your table.

To further add brightness to this salad I topped it with a tangy poppy seed dressing.  It’s light and creamy which can be made in minutes with just a few ingredients.

Add A Poppy Seed Dressing

It so amazing how delicious this dressing pairs with mixed berries, fruits, and nuts.  Using a blender, a food processor or just a jar with a lid and you could have this tangy and slightly sweet poppy seed dressing in a matter of minutes.

I used a blender to mix the ingredients for the dressing.  I added Greek yogurt, mayonnaise, apple cider vinegar, Dijon mustard, vegetable oil, and sugar which I  blended for a minute to combine all the ingredients together.  The poppy seeds were the last to be added to the dressing as to not crush the seeds.  Just stir them into the mixture for two or three seconds to blend them throughout the dressing.  It tastes best if made at least an hour in advance.  This is sure to be a dressing that will become a family favorite.  Let me know what you think if you make it by leaving a comment.  Check out Grilled Stone Fruit With Feta Salad you are sure to like that salad as well.

Ingredients
  • 3 cups clean dry baby spinach
  • 1 cup radicchio leaves, separated and torn into bite-sized pieces, cleaned
  • ¾ cup blueberries
  • 1 cup blackberries
  • ¾ cup strawberries
  • 1 cup toasted pecan
Poppy Seed Dressing
  • ½ cup plain Greek yogurt
  • ¼ cup mayonnaise
  • ⅓ apple cider vinegar
  • 2 tablespoons granulated sugar
  • ½ teaspoon salt
  • 1 teaspoon finely onion
  • 1 teaspoon Dijon mustard
  • ¾ cup vegetable oil
  • 1 tablespoon poppy seeds
Instructions
  1. Put the spinach and radicchio in a salad bowl. Add blueberries, blackberries, strawberries, and pecan and toss gently together.
  2. In a blender, (food processor or jar with a tight-fitting lid), place the Greek yogurt, mayonnaise, vinegar, sugar, salt, onion, mustard, and oil mix for 25 to 30 seconds until thoroughly blended. Refrigerate for an hour to allow the flavors to develop.
