In trying to eat healthily, I ran across a recipe for Baked Beet Chips. With beets being one of my favorite vegetables, I was looking forward to trying these baked beet chips. The recipe was simple enough to follow. I was excited to try it. Using slice beets and a small amount of oil with sea salt for seasoning this should be a healthy nutritious snack food.
The mandolin is the kitchen gadget that I very seldom use. When you need food slice uniformly, the mandolin is your tool. I used it to slice the beets thinly. Most of the time the mandolin is stored above the cabinet over the refrigerator. It’s not a kitchen tool I use often.
I used the mandolin to slice the beets thinly into a small mixing bowl. To that, I added olive oil and sea salt to taste.

Mix all ingredients together, place on a baking sheet lined with parchment paper to prevent from sticking. Turn often to prevent beets from burning. This might take a while, but the end results will be well worth it. I’m telling you to watch your beets so they don’t burn. They are burning when the beet become dark burgundy in color.
