Baked Fish with Slivered Almonds

How do you take an ordinary meal and make it extraordinary?  By making baked fish with slivered almonds.  The beauty of this dish is it’s quick, healthy, and easy to make.  On top of that, it’s really an elegant dish.  Add a nice vegetable and quinoa and you are ready to eat in style

Certainly, we all could eat more fish, of course in moderation.  Whitefish is low in calories, in other words, it’s pretty low in fat if you are trying to lose a few pounds.  You will find it’s a good source of protein and vitamin D, which can be important for cell growth and it aids in digestion.

Selecting Your Whitefish

The whitefish I used was flounder, other white fish you might try are haddock, whiting, or cod.  If you are sensitive to fish odor, white fish is the perfect dish to prepare in your kitchen.  When you bake whitefish you have limited clean-up and it cooks fairly quickly too.

Use a shallow baking dish to cook the fish.  Preheat the oven to 400 degrees.  Spray the dish with a small amount of vegetable spray to prevent the fish from sticking to the pan.  This baked fish with slivered almonds was seasoned with a little salt, pepper, paprika, parsley, lemon juice, and sprinkled with almonds.  Bake the fish at 400 degrees for about 25 minutes until the fish flakes when touched with a fork.

Adding Flair To The Meal With Bake Fish With Slivered Almonds

To add a little flair to the fish, I made a caper lemon sauce.  Using juices from the baked fish along with butter, cornstarch, lemon juice, capers,  a little garlic powder, and pepper makes one flavorful sauce to compliment the fish.  You’re sure to have one elegant sauce for your baked fish with slivered almonds.

Ingredients
  • 1½ pounds fresh flounder fillets (such as cod or sole)
  • 3 tablespoons lemon juice
  • ½ teaspoons minced onions
  • 1 teaspoon chopped parsley
  • ½ teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoons paprika
  • 2 teaspoon sliced almonds
SAUCE
  • ½ teaspoon cornstarch
  • 3 tablespoons fish liquid from bake fish
  • 1 tablespoon butter
  • ¼ cup water
  • ½ teaspoon garlic powder
  • 1 lemon juice
  • 1 tablespoon capers
Instructions
  1. Sprinkle fish with lemon juice. Lay ½ of the fillet in a greased 8X8 inch shallow baking dish.
  2. Using half the minced onions, parsley, salt, black pepper sprinkle it on the fish.
  3. Lay the second half of the fillet on top.
  4. Now, sprinkle the remaining spice on top of the fillet along with the paprika, and sliced almonds.
  5. Bake the fish in a 400-degree oven for about 25 minutes. Test the fish for doneness by flaking the fish with a fork.
SAUCE
  1. Use a large spoon and remove liquid from the baking pan to a small saucepan along with the butter, lemon juice, and garlic powder. Combine cornstarch and water in a small cup.
  2. Add to the liquid. Over low heat stir constantly until the mixture bubbles and thickens. Add the capers. Serve the sauce over the fish.
