Citrus Apricot Dressing

Citrus apricot dressing is so delicious and very easy to make.  It gives a simple salad an added freshness and sweetness. If you have some tart summer fruits this would be the perfect dressing to bring a certain brightness to your salad or salsa.

If you have never made a dressing from scratch you must give it a try.  It’s only been in the last few years that I started making my own dressings and vinaigrettes.  Did I mention how easy they are to make?  I feel they are so much better for you than commercial brands.  The taste is better and you control what ingredients go into your dressing.

For this citrus apricot dressing, I started with a base of olive, apricot preserves, fresh orange juice, chop mint, mustard, maraschino cherry juice, salt, sugar, and orange zest.  Place all the ingredients in a bowl or jar and blend.  It has a wonderful sweet and tart flavor.  Omit the sugar if you like, I’m convinced you will still love this dressing. Another dressing to try is the Creamy Dill, it has a really creamy light taste.

A fresh sweet and bright dressing that is sure to enhance the flavor profile of any salad.

Serves: ¾ cup
Ingredients
  • ¼ cup apricot preserves
  • 3 tablespoons orange
  • 1 teaspoon orange zest
  • 2 teaspoon maraschino cherry juice
  • 1 teaspoon mustard
  • ½ cup olive oil or salad oil
  • 1 teaspoon sugar
  • 1 teaspoon chopped mint
  • ¼ teaspoon salt
  • ½ teaspoon pepper
Instructions
  1. Place all the ingredients except the olive oil into a small bowl and whisk the ingredients together.
  2. Slowly stream the olive oil into the ingredients while whisking vigorously. Whisk until the dressing is thoroughly combined.
  3. Allow the citrus apricot dressing to rest for an hour so the flavor will marry together. Serve the dressing over your favorite salad.
Notes
If you are concerned about the amount of sugar in this dressing omit the maraschino cherry juice it's just another form of added sugar. It does add another layer of flavor combination to this dressing.
