Tasty Cobb Salad

The perfect salad that gets your attention is the tasty cobb salad.  This is a salad that gets you all excited about eating your vegetables.  Most of the ingredients can be found right in your refrigerator or pantry.  I often used a rotisserie chicken from my local market to make my tasty cobb salad.  It’s a beautifully structured salad with lots of brilliant colors of the rainbow.

I often wonder where the cobb salad got its name. I did a little research and found out that the owner of the Brown Derby in California by the name of  Robert Cobb created this salad back in 1936.

Robert Cobb created the salad with foods he found in his restaurant one late night.  He shredded iceberg lettuce on a plate topped with chopped chicken, crumbled pieces of bacon, sliced avocado, chopped boiled eggs, chopped tomato,  and Roquefort cheese (the ingredients varied a bit depending on which story you followed).  The ingredients were then arranged in strips on top of the bed of lettuce, then dressed with French dressing.

I chose to use mixed salad greens with radishes, carrots, pecan, red onions, red cabbage, crumbled bacon, chopped hard cooked-eggs, and chopped chicken dressed with a homemade blue cheese dressing.

I guess you can say this is my spin on a cobb salad.  Anyway, you spin it, it’s a delicious salad that you won’t mind eating for lunch, dinner or a snack.

The tasty Cobb salad is bursting with flavor color and nutrients needed to fuel the body.

Ingredients
  • 2 cups mixed lettuce
  • 4 slices bacon, crisp-cooked, and crumbled
  • 1-1/2 cups cubed rotisserie chicken breast ( shredded or cubed chicken of your choice)
  • 1 medium tomato chopped
  • 2 hard-cooked eggs, chopped
  • ½ cup sliced carrots, radishes, red cabbage
  • ¼ cup sliced red onions
  • ½ cup toasted pecans (optional)
  • BLUE DRESSING
  • ½ cup Greek yogurt or mayonnaise
  • ¼ cup buttermilk
  • 1 tablespoon dijon mustard
  • ½ cup blue cheese
  • 1 teaspoon lemon juice
  • pinch of sea salt and pepper
Instructions
  1. SALAD:
  2. On a large platter or wide shallow bowl, arrange the mixed lettuce.
  3. Top the lettuce and arrange chopped rotisserie chicken, radish, red onions, chopped tomatoes, red cabbage, toasted pecan, sliced carrots, chopped eggs, and crumbled bacon.
  4. BLUE CHEESE DRESSING:
  5. Whisk together the Greek yogurt, buttermilk, dijon mustard, lemon juice, salt, and pepper in a medium bowl until smooth. Add the blue cheese and mix into the dressing.
  6. Serve the tasty cobb salad onto individual plates; accompany with the blue cheese dressing (or dressing of your choice) in a bowl or pitcher to allow each serving to taste.
