Crab Imperial Stuffed Potatoes

Well, Brunn started his business called Delicious Brand Seafood Seasoning and ever since that day the spice has influenced Maryland cooking.  Today that same recipe is the well known Old Bay Seasoning.  It’s used to flavor steamed shrimp, crab cakes, steamed crabs, crab imperial stuffed potatoes, as well as so many other kinds of seafood and food dishes.  Here’s another dish you might like to try which contains seafood, Chunky Salmon Potato Chowder.

I made these crab imperial stuffed potatoes after finding this fantastic price on claw crab meat in my local market.  Crab meat from the claws is excellent for making side dishes, dips, soups, and stews.  To be honest the higher quality crab meat can be a bit pricey.  I’m a lady on a budget and this dish of crab imperial stuffed potatoes could easily be featured on an upscale restaurant menu.

Don’t be discouraged if you can’t find Maryland crab in your area. If you are near the water you are sure to find local or crab meat from other areas or use other seafood such as shrimp as a replacement.

Ingredients
  • 3 large baking potatoes
  • 1.2 cup milk
  • 8 ounces crab meat
  • ¾ teaspoon Old Bay Seasoning
  • ¼ cup mayonnaise
  • ¾ cup sour cream
  • 1 teaspoon fresh chopped parsley or cilantro
  • ¼ cup chopped green peppers
  • ½ teaspoon salt
  • 1 teaspoon pepper
  • 2 beaten egg whites
  • ½ grated cheddar cheese, divided (to place into the mixture)
  • ¼ cup cheddar cheese for garnish
  • ⅓ cup chopped green pepper for garnish
Instructions
  1. Preheat the oven to 400 degrees
  2. Pierce the potatoes with several punctures. In addition, wash and bake the potatoes at 400 degrees until soft. Cut the potatoes in half lengthwise and carefully scoop out potato. In addition, set the potatoes aside.
  3. In a medium mixing bowl, put potatoes and milk and mash well.
  4. Stir in crabmeat and Old Bay Seasoning.
  5. In addition add sour cream, mayonnaise, green peppers, salt, and pepper and mix well.
  6. In another small bowl, beat egg whites until foamy and stir into crab mixture. Mix in ½ cup grated cheese. Fill empty shells with crab mixture and top with remaining ¼ cup cheese. Garnish with chopped green peppers.
  7. Place potatoes on a baking pan, reduce oven to 350 degrees and bake at 350 degrees until golden brown, approximately 25 minutes.
