Korean Beef and Rice Bowls

Just thank me now!  These Korean beef and rice bowls are so delicious.  On top of that, they are simple and easy to make.  Did I mention they are kid friendly.

If you have children they will love the beef and rice bowls.  You won’t find a lot of fussy ingredients in this dish that kids don’t like.  All you need is ground beef, garlic, soy sauce, sesame oil, fresh ginger, red pepper flakes (if you don’t want spicy omit the flakes) and did I mention brown sugar.  In fact, this bowl is so easy your kids will want to help you prepare it.  It’s that simple and quick to prepare.

I was visiting my girlfriend Debbie, and her husband in Washington state.  Debbie and I worked together for many years teaching at the same middle school.  Debbie and Vern retired and moved from Maryland to Washington to be near their twin daughters who both recently had baby girls!  They are two proud grandparents.

Vern made the Korean beef and rice bowls for dinner one evening.  He served the beef over rice.  The dish has so many levels of flavor, it’s spicy, savory and sweet all at the same time.  It literally takes less than 30 minutes to prepare, but to look at the dish it looked pretty complicated.  Trust and believe this dish was a hit.

Once your family tastes the Korean beef and rice bowls I do believe this will become one of your families favorites.  I’m sure they will demand that you put it into the weekly meal rotation.

Switch it up a bit, add some red pepper flakes,  add some of your favorite vegetables.    Include a few seasonal vegetables, such as broccoli, asparagus, peas, carrots etc.  Serve the beef over brown/white rice, cauliflower rice, or broccoli rice. Korean Beef and Rice Bowls

Ingredients
  • 1 pound lean ground meat or ground turkey or chicken
  • ¼ cup soy sauce
  • 2 cloves minced garlic
  • ¼ cup brown sugar tightly packed in the cup
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 2 teaspoons sesame oil
  • ¼ teaspoon ground pepper
  • 1 teaspoons grated fresh ginger or ½ teaspoon ground ginger
  • 2 cups cooked brown/white rice, cauliflower rice or broccoli rice
  • GARNISH
  • green onions
  • sesame seeds
  • noodles
Instructions
  1. Over medium heat cook the ground beef and garlic until the meat is light brown (turkey and chicken should be cooked until beige in color). Break up the lump in the ground beef as it is cooking.
  2. In a small bowl, mix together the brown sugar, grated ginger (ground ginger), red pepper flakes (optional), soy sauce, and sesame oil. Add the mixture to the skillet with the ground beef allow it to cook until the seasoning is thoroughly combined. This should take about three minutes.
  3. Server over rice, and garnish with your choice of green onions, sesame seeds or noodles.
Notes
Prepare your rice according to the package directions.
