It’s less than one month into winter and I’m already craving springtime. A great way to get through the winter is to get creative with my cooking and that’s where baked citrus salmon comes into play.
There is nothing like a beautiful piece of salmon to change your mood. Salmon paired with lemon and orange citrus places me in a tropical mindset. That can lead to a very light-hearted attitude. Then all I would need is a tropical drink and I could dance around the kitchen with a big smile on my face doing a hula dance. Cooking and dancing pairs well together. It makes me feel better immediately. My spirit is lifted.
I used my spice blender to grind the garlic and cilantro together. In a small bowl I added the two in with Dijon mustard, lemon and orange juice. I took the blend and spread the mixture on top of the salmon in a greased cooking dish placing thinly sliced lemon and orange slices on top of the salmon before baking at 350 degrees for 15 to 20 minutes.
What a lovely piece of sunshine smiling back at me. The baked citrus salmon was full of flavor with a light bright tropical taste. You might like to try Rosemary Pan Seared Salmon as well.
Baked Citrus Salmon
- 2 medium salmon pieces
- 2 to 4 thinly slices of lemon
- 4to 6 thinly slices of oranges
- MARINADE
- 3 tablespoons olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- ½ l teaspoon lemon zested
- 1 teaspoon lemon juice
- ½ teaspoon orange zest
- 1 teaspoon orange juice
- 1 clove garlic
- 2 tablespoons cilantro
- ½ teaspoon salt
- ½ teaspoon pepper
- Cooking spray
- Preheat oven 350 degrees
- Spray a medium baking dish with cooking spray
- Place fish skin side down in baking dish.
- Using a spice grinder or chop cilantro and garlic
- In a small bowl add chopped cilantro, garlic, dijon mustard, olive oil, honey, lemon zest, orange zest, lemon juice, orange juice salt and, pepper.
