How to Grill Peaches and Corn on the Cob?

Start by grilling sliced peaches and corn on the cob by using a grill pan.

  1. Begin by spraying a grill pan with vegetable spray.
  2. Wash and dry two peaches.  Slice the peaches into wedges.  Set aside.
  3. Shuck two ears of corn.  Set aside.
  4. Preheat the grill to medium-high.
  5. Place the corn and peach slices on the grill. Grill for 2-3 minutes, or until there are grill marks.  Remove from heat.
  6. Once the corn has cooled, cut the corn off the cob.  Set aside.

How to Assemble The Salad

  1. Begin by making the balsamic dressing, use a jar with a lid, add balsamic vinegar, olive oil, minced garlic, honey, salt, and pepper.  Set aside.
  2. Ingredients

  • 2 fresh whole peaches, sliced
  • ½ cup pecan, halves
  • ½ cup fresh blueberries
  • 1-ounce feta cheese, cubed
  • salt & pepper to taste
Balsamic dressing or bottled dressing
  • ¼ cup balsamic vinegar
  • ½ cup olive oil
  • 1 Tablespoon minced garlic
  • 2 Tablespoons honey
  • ½ teaspoon salt
  • ½ teaspoon pepper
