Full Flavored Lemon Pepper Wings

Full Flavored Lemon Pepper Wings are like bringing an old friend to the dinner table.  The taste is delicious as well as familiar.  A pop of tartness in your mouth evokes a spark of wonderful flavor that makes you just want to shake your head and ask, how’s it possible to get that much flavor in one small piece of chicken?

Calories Don’t Count!

This is not the time to count calories when you bring these beauties to the table.  Have them for dinner, use them as an appetizer,  the main course for your next game day event you might be hosting for friends and family, of course, it could be the sheer fact that you just love eating wings.  These Full Flavored Lemon Pepper Wings are lightly seasoned and deep-fried to perfection.  Finally, they are tossed in cracked pepper, melted butter, fresh lemon juice, chopped parsley, lemon zest, and lemon pepper seasoning to make one of the most awesome sauces around, in dressing these beautiful wings.

Wing Preparation

The first thing that I do when prepping the wings is to:

  • Remove any stray feathers and foreign matter that may have been left behind during processing.
  • A chicken wing is made up of three parts.  Those parts are the drumette (this is considered the meatiest part of the wing).  Next, is the wingette ( the middle section of the wing which is also referred to as the flat or flap). Last, is the wingtip (also called the flapper).
  • Begin by cutting the wings into three sections. The wingtips will not be used for this recipe however, they can be used later to make chicken stock.
  • Next, wash the wings in a large bowl filled with warm water over several times with a small amount of vinegar to clean them. Washing the wings removes any foreign debris, in my opinion, it helps kill bacteria, and add flavor.  I’m well aware of the theories which say it’s not necessary to wash the chicken, each to their own. Throughout the cooking process, I sanitize my workspace as well as cooking equipment.  So in my kitchen, I will continue to clean chicken before I season and cook it as I’ve always done.
  • After that, I lightly season the chicken with garlic powder and crack pepper.  I don’t use salt because the wings will be seasoned at the end of the cooking process when the wings are coated with the lemon pepper seasoning.  It has more than enough salt added.

Using a deep fryer preheat the vegetable oil to 375 degrees.  Add the wings to the hot oil and deep fry them for 8 to 12 minutes.

Make the Lemon Pepper Sauce

  1. As the wings are cooking make the lemon pepper sauce.
  2. Melt the butter in a glass measuring cup in the microwave.
  3. Add the lemon juice, lemon zest, chopped parsley, cracked pepper, and lemon pepper seasoning to the cup and mix thoroughly.
  4. In a large mixing bowl add the lemon pepper sauce and the deep-fried wing to the bowl and toss until thoroughly coated.

Ingredients
  • 2 pounds chicken wings (wingtips removed)
  • 1 tsp. black pepper
  • 1 tsp. garlic powder
  • 40 ozs. Vegetable oil for deep-frying
  • 1 tbsp. vinegar
Lemon Pepper Sauce
  • 1 stick of butter, melted
  • 6 tbsp. fresh lemon juice
  • ½ tsp. lemon zest (optional)
  • ½ tsp. cracked black pepper
  • 1 tablespoon lemon pepper seasoning
  • ½ tsp. chopped fresh parsley (optional)
Instructions
  1. Preheat the deep fryer to 375 degrees or use a Dutch oven with a thermometer to check the temperature.
  2. First, wash the wings in 1 tablespoon of vinegar and warm water to remove any film or debris.
  3. Cut the wings into sections flats, wingettes, and wingtips. After that, remove the wingtips from the recipe. For example they can be used at a later date to make chicken stock. Now with a paper towel pat the chicken wings dry.
  4. First, sprinkle the wings with the pepper and onion powder.
  5. Next, deep-fry half the wings for 8 to 12 minutes. Bring the oil up to temperature then cook the last batch.
  6. Melt the butter in a glass measuring cup in the microwave. Remove from the microwave.
  7. Add the lemon juice, lemon zest, chopped parsley, cracked pepper, and lemon pepper seasoning to the butter and mix thoroughly.
  8. Next, in a large mixing bowl add the lemon pepper sauce and the wing to the bowl and toss until thoroughly coated.
  9. Lastly, serve the wings with a blue cheese dressing, along with fries, carrots and celery sticks. Enjoy!
